Spaghetti aglio,olio e peperoncino

Cari amici di verbling, oggi parliamo di una ricetta molto famosa:
spaghetti aglio,olio e peperoncino!
Questa ricetta è forse la più semplice della cucina italiana, però, per essere buona, dovete prepararla bene.
E’ un piatto molto antico di origine campana*, che si può mangiare in tutte le stagioni dell’anno, sia a pranzo che a cena. Non ci sono regole sull’uso dell’aglio e del peperoncino, ognuno può scegliere le dosi a seconda dei propri gusti.

La preparazione è semplice:

Cuocete gli spaghetti.Versateli in acqua salata e scolateli soltanto quando sono al dente*. Tagliate il peperoncino fresco nel senso della lunghezza, eliminatene i semi che sono troppo amari, e fatelo rosolare in una padella antiaderente con un po' d'olio. Aggiungete nello stesso tegame anche uno spicchio d’aglio sbucciato. Dopo qualche minuto, rimuovetelo ed inserite un po’ d’acqua di cottura della pasta, che conserverete fino alla fine dell'intera operazione.
Dopo aver scolato gli spaghetti, riponeteli nella padella insieme all’olio e al peperoncino e insaporite col prezzemolo tritato. Servite gli spaghetti aglio e olio in un piatto di portata accompagnando il piatto con un bel bicchiere di vino bianco secco. Consigliamo il Frascati superiore, l’Alcamo bianco o il Tocai Friulano.
