"I don't mind" and "I don't care" are not the same

Actually they are not identical or interchangeable. The context matters and so does the intonation. Here are some examples:
1."Do you mind if I open the window? No, I don't mind, go ahead."
= ¿Te importa que abra la ventana? No, no me importa....
2. "I don't care if you open the window or leave it closed, just be quiet."= Me da igual que abras la ventana o que la dejes cerrada, pero estate callado.
3. "Who cares?" = ¿Qué más da?
4. "I don't care what you think" = No me interesa su opinión/lo que pienses.
5. "I don't mind if you smoke, it doesn't bother me. I just care about your health."= no me importa que fumes, no me molesta. Pero sí que me importa tu salud.
